Closing Procedures

Lock all doors.

End of Day Register Process
Close out register and tips. Follow the close out procedures for the register.
Prepare and seal deposit.

Dishwashing
All dishes washed and sanitized placed on dry racks and drain boards allow to air dry. Use gloves as the sanitizer can he hard on hands.

Espresso Machine
Backwash espresso machine.
Remove stainless tray and wash. Replace.
Wipe down exterior of machine.
Turn machine off.

Laundry
Place all all towels in hamper.
Tidy the area on the floor near the hamper - pick up any large espresso grounds chunks.

Counters
Wipe down counters
Straighten stools
Wipe off bar tops

Security

Lock drive thru window
Double check all 3 front doors.

Pastries & Baked Goods

Ensure all pastries and baked goods are in sealed containers and refrigerate if needed.
If using aluminum storage trays, ensure the lids are properly sealed.

Perishables

All perishables (cream cheeses, smoothie mixes, milks, etc) are in refir.
All refrigerator doors closed tightly (including milk cooler).

Equipment Checklist

Hot water tower off
Espresso machine off
Drip coffee trays empty
Hot water machine off
Blender station wiped down and clean
TVs off
Music off

Miscellaneous

Any open coffee bags sealed
All powder jar lids are on completely
Any boxes broken down and placed in recycle pile
All trash cans emptied and trash in dumpster
Storage room light off and ensure dairy cooler is closed
Ensure all sinks are off and empty/drained

Lights

Bakery and bathroom lights off

Bathrooms

Check bathroom supply levels and replace if needed

Heat/AC

Lower heat to 65 and ac to 70

Final Checks

Double check all front entry doors
Main lights turned off pendants left on
Close gate
Close store room door to main room (but leave side door open)
Turn off store room light
Lock door behind you.
